Summary
The Lead Pastry Cook (“Cocinero/a Principal de Repostería”) prepares high-quality baked goods and desserts for all meal periods and events while supervising the pastry team and maintaining a clean, organized workspace. The role requires extensive pastry technique knowledge, production experience, and a commitment to quality, sanitation, and cost standards. Ensures uncompromised quality and timely service, striving for excellence to enhance the guest experience.

ESSENTIAL DUTIES

  • Leads the pastry team, ensuring quality, productivity, mentoring cooks, and maintaining a clean, organized kitchen to meet hotel and health standards.
  • Prepares assigned pastry items according to standard recipes or guest specifications.
  • Ensures quality control and consistency, including proper food storage, taste, presentation, and accurate labeling with expiration dates.
  • Maintains cleanliness and organization of the work area and ensures proper use, maintenance, and cleaning of equipment, including personal tools.
  • Assists in receiving, storing, rotating food properly, and controlling food costs by planning portions and minimizing waste.
  • Creates pastries using kitchen equipment such as sheeters, mixers, ice cream machines, and ovens.
  • Assists and supports the Pastry Chef in developing new menu items.
  • Provides exceptional service to guests, accommodating special requests.
  • Trains and onboards new associates, ensuring they understand pastry standards, procedures, and safety protocols.
  • Produces orders promptly and in accordance with specifications.
  • Prioritizes work assignments and meets deadlines in a fast-paced environment.
  • Displays work habits that promote accident prevention and safety.
  • Performs additional duties and responsibilities as directed by the leadership team.

 

 

Qualifications


QUALIFICATIONS

  • High school diploma or GED.
  • At least 2 years of relevant experience and/or training.
  • Previous similar position in a hotel, or similar business entity preferred.
  • Ability to always maintain a friendly, professional, team-oriented, positive demeanor and diplomatic attitude, especially under stress or challenges.
  • Must be able to attain a valid San Diego County Food Handler certification upon hire. Evans Hotels will provide this training and is to be completed at the company’s expense.
  • Availability to work on weekends and holidays is required.
  • Ability to stand, kneel, squat for prolonged periods of time, up to and including, the entire shift and lift up to 50 lbs.
  • The following position will be filled in accordance with the process set forth in California Labor Code Section 2810.8 and San Diego Municipal Code 311.0101 et. seq.
