Introduction

Welcome to the Apollo Hotel – a dynamic and reputable conferencing hotel known for delivering outstanding guest experiences and hosting exceptional functions and corporate events. Our venue is a preferred destination for business gatherings, private functions, and conferences of all sizes.

We’re currently seeking an experienced and Head Chef to lead the kitchen team. This is a leadership role where you will oversee all culinary operations, staff and ensure food quality and consistency.

This is a fantastic opportunity for a passionate and experienced chef to manage a small but dynamic kitchen team in a predominantly day-shift environment.

 

 

Duties & Responsibilities

  • Menu Development: Plan and create à la carte, buffet, and banqueting menus.

  • Staff Management: Hire, train, supervise, and evaluate kitchen staff.

  • Quality Control: Maintain food quality, consistency, and health & safety standards.

  • Inventory & Purchasing: Manage stock, liaise with the cost controller, and ensure cost-effective purchasing.

  • Operational Efficiency: Oversee kitchen workflow and resolve operational issues.

  • Financial Management: Contribute to budgeting and cost control (food and labour).

  • Communication: Liaise effectively with hotel management, staff, and guests.

  • Stay Updated: Keep abreast of industry trends and innovative culinary techniques.

Desired Experience & Qualification

  • Proven experience in à la carte, buffet, and banqueting environments.

  • Strong culinary skills and knowledge of diverse cooking methods and flavor profiles.

  • Demonstrated leadership and team management capabilities.

  • Excellent organisational and problem-solving skills.

  • Business acumen in food cost control, menu pricing, and budget management.

  • Willingness to work shifts, weekends, and public holidays.
