Key Responsibilities:
- Kitchen Operations: Assist in coordinating daily kitchen activities, including food preparation, cooking, and plating, ensuring standards are met.
- Supervision & Training: Train all associates in the kitchen on job duties, including plate presentation and display work. Oversee kitchen staff during shifts, provide guidance, and assist in training new team members.
- Menu & Recipe Execution: Help develop menu items, test recipes, and ensure dishes align with culinary expectations. Prepare recipe cards and picture presentations of all menu items.
- Inventory & Ordering: Monitor ingredient inventory, assist with ordering supplies, and manage waste reduction practices.
- Compliance & Safety: Ensure adherence to food safety regulations, proper kitchen hygiene, and equipment maintenance.
- Collaboration: Work closely with other kitchen leaders and front-of-house teams to ensure seamless service.
- Problem-Solving: Take immediate action on problems encountered in the kitchen, addressing challenges like timing issues or ingredient shortages with quick, effective solutions.
- Administrative Duties: Write schedules, direct personnel, maintain use records, and submit payroll hours to Accounting on time.
- Leadership: Supervise the entire kitchen staff in the absence of the Chef de Cuisine, including utility and sanitation associates, and provide supervisory guidance and support.
- Engagement: Participate in monthly department meetings, weekly staff meetings, weekly kitchen meetings, monthly kitchen inventory, and the MOD program.
Qualifications:
- 2+ years of culinary experience, preferably in a leadership role.
- Strong knowledge of kitchen operations, food safety, and sanitation standards.
- Ability to lead, motivate, and inspire a diverse kitchen team.
- Excellent communication and organizational skills.
- Flexibility to work evenings, weekends, and holidays as needed.
- Culinary degree or relevant certification preferred but not required.
Physical Requirements:
- Ability to stand for extended periods.
- Lift and carry up to 50 lbs.
- Perform tasks in a hot, fast-paced kitchen environment.
Status: Non-Exempt (eligible for overtime pay)
