As Head Pastry Chef,you will join a committed culinary team, over 7 varied venues, driven with the intent of delivering 5* Culinary experiences to an international diaspora.
As our ideal candidate, you have proven experience in a highly active environment. Your organizational, communication, and leadership skills are second to none and you enjoy developing guest solutions that break boundaries.
An outgoing, people-friendly personality with an ability to think on your feet during changing situations is also essential.
You’ll work closely with the management team to develop constantly evolving service goals.
Requirements
Key Responsibilities
- Establishes culinary standards for the speciality of each kitchen which includes banqueting that caters to several guests.
- Monitor and control the maintenance of the entire pastry and bakery operation.
- Responsible for the oversight of all bakery items that are prepared in their section
- Plans menus and compile recipes for food tasting to be approved by the Executive Sous Chef.
- Checks daily food preparation, individual costs, quality, quantity inventories and portion control.
- Plan, implement and manage daily operations of the pastry and bakery section including monitoring supplies and ingredients necessary for daily operations and regular quality checks of material and condition of equipment.
- Prepare fresh and innovative items for addition to the menu.
- Control operating expenses through effective scheduling, budgeting, purchasing decisions, and inventory control.
- Conducts training and thorough briefing on the correct usage of kitchen equipment and machinery and to check that this is carried out in the correct manner by all kitchen colleagues.
- Maintains record and follow up documentation, checklists for control purposes
What We’re Looking For
- Creative Head of Pastry & Bakery with experience in high profile busy establishments
- preferable experience in 5* Hotels
- preferable experience in Pan Asian restaurants
- Available to start at short notice
- Hands-on approach with a ‘can-do!’ work attitude
- Commitment to delivering exceptional guest services with a passion.
- Ability to find creative solutions while taking ownership for all duties and tasks assigned
- Teamwork-oriented
- Demonstrates great passion, has high energy and contributes with enthusiasm
- Positive, proactive outlook, hard-working and outgoing personality - and a fun-to-work-with energy at all times!
- Past experience of working with pastry and bakery
- Swiss work permit holder or EU ID / Passport holder
- Proficiency in multiple languages is a bonus
- Strong working knowledge of industry regulations
