Wurzak Hotel Group is looking for an experienced Food & Beverage Manager to support the Outlets & Banquets at our gorgeous property, Renaissance Fort Lauderdale Marina Hotel. This position will be responsible for interviewing, hiring, training, scheduling and managing employees, as well as overseeing inventory for all the Outlets and Banquets. We are looking for someone with personality, experience, and drive to contribute to the continued success of this luxury property.

General Requirements

Sales

  • Maximize profit through appropriate staffing, revenue generation, and efficient and effective cost management.
  • Aggressively developing a business portfolio in concert with the Sales Team.
  • Create, enforce, and execute hotel business objectives and goals.
  • Applies and continually broadens knowledge of food and wine pairings and cutting edge cuisine with emphasis on current event trends.

Staffing

  • Oversee staffing and development of the Beverage & Food and Banquet departments and line employees; supervise workforce management activities including performance reviews, discipline, and training.
  • Coordinate activities via instructions and execution.
  • Be accountable for responsibilities in their absence.
  • Set up tables according to service standards.
  • Lead various internal and external meetings.
  • Observes service behaviors of Ambassadors and provide feedback.
  • Ensures employees understand expectations and parameters.
  • Maintain adherence and promotion of Company’s corporate identity.
  • Review activities daily, operating and sales reports to determine changes in programs and operations as required.

Operations

  • This is a “working” Beverage & Food Manager position.  Working hours will vary as business needs dictate.
  • Anticipate and respond to guest/customer requests, concern and problems to ensure complete guest/customer satisfaction.
  • Projects supply needs for the department, (e.g., china, glass, silver, buffet presentations & props).
  • Applies knowledge of all laws, as they relate to an event.
  • Understands the impact of Banquet operations on the overall success of an event and manages activities to maximize customer satisfaction.
  • Manages departmental inventories and maintains equipment.
  • Uses banquet beverage records to control liquor costs and manage the banquet beverage perpetual inventory.
  • Schedules banquet service staff to forecast and service standards, while maximizing profits.
  • Assists team in developing lasting relationships with groups to retain business an increase and increase growth.
  • Consistent professional and positive demeanor when communicating with guests and Ambassadors.
  • Handle emergency situations and other incidents.
  • Serve all food courses and beverage items to guests in accordance with function requirements and Hotel standards.
  • Remove all tabletop items, linen and equipment from the function room as designated by function requirements.
  • Set up, monitor, refresh and breakdown coffee breaks receptions and buffet tables for specified functions according to group requirements.
  • Complete closing side duties.
  • Maintain complete knowledge of and strictly abide by state liquor regulations, particularly those prohibiting service to minors and intoxicated persons.
  • Oversee and be accountable for compliance with all legal requirements, including OSHA, health department, fire regulations, etc.
  • Perform special projects and other responsibilities as assigned.
  • Prepare budgets, marketing plans, menus, and training plans.
  • Any other tasks/duties as requested by management.

Education and Experience:

  • Bachelor’s degree in hospitality or related field; or, equivalent training and experience.
  • Minimum 4 years of experience in Beverage & Food and Banquets within a high volume and diversified environments.
  • Experience in a hotel environment (Marriott brand preferred).
  • Multi-outlet experience.
  • Banquet experience.
  • Knowledge of the South Florida market.
  • Food Safety Certification
