As Executive Chef at the Charleston Marriott, you will lead our culinary team, crafting exceptional dining experiences for our guests. You'll be responsible for the overall success of our kitchen operations, ensuring high-quality food, efficient service, and a positive work environment. This is a key role in providing memorable experiences for our hotel guests and contributing to the hotel's overall success.

Job Duties and Responsibilities:

Menu Development and Recipe Creation: You will develop and maintain innovative menus, creating original recipes that align with current culinary trends and the preferences of our guests.
Kitchen Management: You oversee all aspects of kitchen operations, including food preparation, cooking, and presentation. This includes managing kitchen staff schedules and workflow.
Staff Training and Development: You will train and mentor kitchen staff, ensuring they adhere to food safety standards and maintain high culinary skills. You will also conduct performance reviews and provide constructive feedback.
Inventory and Cost Control: You are responsible for managing food inventory, minimizing waste, and controlling food costs to maximize profitability. You will analyze cost data and implement strategies to improve efficiency.
Food Safety and HACCP Compliance: You will maintain the highest standards of food safety and hygiene, ensuring compliance with all relevant regulations, including HACCP principles.
Catering Management: You will oversee all aspects of catering events, from menu planning and food preparation to service and presentation.
Culinary Innovation: You will continuously explore new culinary trends and techniques to enhance our menus and offerings.
Team Leadership: You will foster a positive and collaborative work environment, motivating your team to achieve high performance.

Required Qualifications
Education
Culinary Degree or equivalent experience required.
Experience
Minimum of 5 years of experience as a Chef in a high-volume, upscale establishment.
Proven experience in menu development, recipe creation, and cost control.
Experience in staff training, supervision, and performance management.
Knowledge/Skills
Extensive knowledge of culinary techniques, food preparation, and presentation.
Proficient in inventory management, purchasing, and cost control.
Strong understanding of food safety regulations and HACCP principles.
Excellent communication, interpersonal, and leadership skills.
Ability to work effectively under pressure and manage multiple tasks simultaneously.
Proficiency in Microsoft Office Suite.
Preferred Qualifications
Experience working in a Marriott hotel or similar upscale environment.
Certified Food Safety Manager certification.
Physical Requirements/Work Conditions
Ability to stand for extended periods of time.
Ability to lift and carry up to 50 pounds.
Ability to work in a fast-paced, high-pressure environment.
May require working evenings, weekends, and holidays.
