What You’ll Do

As the Director of Operations at Gravity Haus Breckenridge, you’ll lead our restaurant's strategic and operational success and member amenities. You will oversee the restaurant General Manager (who leads the day-to-day FOH/BOH teams) while also stewarding the overall member experience across StarterHaus (co-working), Dryland (fitness), and our Onsen/Recovery space (hot tubs, future cold plunge, and dry sauna).


This position is accountable for financial performance, team leadership, operational execution, member satisfaction, and revenue growth. It must collaborate strongly with the Hotel General Manager (managed separately by Vail Resorts) to align efforts across departments and elevate the whole Gravity Haus experience.


Financial Leadership & Accountability

  • Own full P&L performance for F&B and Membership departments.
  • Lead proactive forecasting and reforecasting across all revenue and expense lines, including food sales, beverage sales, private events, membership activations, and retail.
  • Identify and execute on incremental revenue opportunities through private dining, group sales, local partnerships, and new offerings across both F&B and member amenities.
  • Drive cost control initiatives and margin improvement through disciplined COGS and labor management, while maintaining exceptional quality and service.
  • Lead monthly financial reviews with key stakeholders, using data to guide decision-making and adjustments.
  • Ensure timely and accurate invoice processing, payroll accuracy, and budget compliance.

F&B Oversight & Team Leadership

  • Provide direct oversight to the restaurant's General Manager; all restaurant managers report to the GM, who reports to you.
  • Mentor and support the F&B management team to drive performance, accountability, and leadership growth.
  • Run daily preshift meetings, focusing on service standards, team alignment, member touches, and daily business priorities.
  • Maintain tight controls over labor scheduling, guest experience, and menu execution.
  • Partner with the Executive Chef and Bar Manager on menu development, pricing strategy, and product innovation.
  • Collaborate on sales reporting and menu engineering to phase out underperformers and boost high-margin items.
  • Ensure consistent execution of key operating practices, including inventory (monthly), payroll (weekly), and compliance protocols.

Membership & Amenities Leadership

  • Serve as the on-site leader for the Gravity Haus Breckenridge membership experience, ensuring StarterHaus, Dryland, and Onsen/Recovery spaces run at full potential.
  • Monitor and improve member satisfaction through service feedback loops, engagement initiatives, and programming.
  • Collaborate with fitness coaches to ensure all classes, personal training, and recovery services meet GH brand expectations.
  • Support membership sales and retention through presence, programming, and community building.
  • Partner with the Membership, Events, and Marketing teams to host, plan, and support on-property activations.

Cross-Department & Hotel Collaboration

  • Act as the primary Gravity Haus liaison to the Hotel GM (operated by Vail Resorts) to align lodging, guest service, and member/F&B strategies.
  • Coordinate across departments to ensure operational consistency, mutual support, and guest/member satisfaction.
  • Help build a culture of high performance, trust, and shared accountability between the hotel and GH-operated amenities.

Events, Private Dining & Revenue Growth

  • Partner with the Private Events Manager to drive bookings in the newly renovated lounge and dining spaces.
  • Strategize with the F&B and Marketing teams to build programming that generates new revenue streams and attracts both locals and members.
  • Lead the development and execution of group sales packages, buyouts, and creative event offerings.

Brand & Cultural Leadership

  • Be a highly visible and engaged leader. Be present in the restaurant, co-working space, and recovery areas daily.
  • Ensure Gravity Haus values are lived out through every guest and member interaction.
  • Build and nurture a team culture rooted in performance, respect, fun, and hospitality.

Who You are

  • You have at least 3 years of management leadership experience in an upscale restaurant that focuses on exceptional service, food, and beverage.
  • You have strong leadership acumen that you use to align culture and standards initiatives with the company’s overall strategic direction.
  • You have excellent emotional intelligence and interpersonal skills, with the ability to build strong working relationships with team members and community members, creating powerful moments
  • You have demonstrated the ability to develop and empower talent by creating learning & growth opportunities while managing the complete team member experience from start to finish.
  • You have experience in both independent & corporate restaurant settings with annual revenue over 3m per location 
  • You can read & interpret financial statements and budgets to align quarterly & period goals with the shift focus
  • You have demonstrated success building a high-expectation service program in the hospitality industry
  • You have a sense of ownership that identifies pain points in operations steps to fill voids and build infrastructure for future success and stability.
  • You have found success collaborating with the leadership team & cross-functional teams to develop the necessary strategy, infrastructure, systems, and operations support for operational excellence 
  • You have outstanding communication skills with the ability to work collaboratively with the leadership team, providing sound strategic advice through periods of change and growth
  • You have an appreciation for and commitment to the outdoors, sustainability, and your own personal growth. 

Education and Experience

  • Minimum 3 years of experience in a Senior Management role 
  • Bachelor's Degree Preferred
